When I went to pick up my share at Common Thread last week, there was one vegetable unfamiliar to me: spaghetti squash. I had never thought to buy or eat it before, because I always assumed it had a demanding cooking process. But when Cat, one of the apprentices on the farm, told me they were giving the squash out for free I decided to snag one.
Still thinking it would be an involved process, I decided to save it for the weekend when I would be home for fall break. Last night, I prepared the Spaghetti Squash for our family dinner. I found a couple of ways to prepare it online, either using an oven or a microwave. I chose to microwave it because we were in a bit of a time crunch. These were the instructions I followed:
Preparing the spaghetti squash this way was super quick and easy. If you have more time, you could bake it in the oven on 375F for an hour. Then slice it, de-seed it, and stick it back in for 10 minutes.
You can prepare the spaghetti squash like you would prepare any other pasta. I heated up tomato sauce to serve with it. If I had more time, after I scraped the spaghetti out I would have liked to mix garlic, basil, and parmesan with it in a frying pan (see more recipes).

- Poke 4 holes on each side of the squash with a large knife
- Microwave on high for 15 minutes
- Let cool 5-10 minutes, then cut in half lengthwise
- Scoop out the seeds in the middle
- (You can save the seeds to bake later on, like you would with Pumpkin seeds)
- Use a fork to scrape out the insides until you hit the rind
- (The squash naturally peels away in spaghetti-like noodles)

It ended up tasting just like angel hair pasta, only better because it had a nice crunch to it! I definitely recommend spaghetti squash to those of you who want to avoid gluten, have a low-carb dinner, or are not big veggie eaters. It's a delicious and healthy substitute for pasta!
