Vegetarian Chili Recipe
|
- 1 T olive oil
- 1 garlic clove
- 1/3 c Spanish yellow
onion
- 1/4 t crushed red
pepper flakes
- 1/2 T ground
coriander
- 1 T ground cumin
- 1 medium green
pepper, 1 medium red bell pepper, seeded and chopped 1 t dried oregano
- 2 T chili powder
- 3 medium tomatoes,
peeled and chopped or 1 28 oz can tomatoes
- 1 3/4 c cooked
kidney bean, rinsed if canned
- 1 1/2 c rinsed
canned black beans
- 1 celery stalk
- 1/2 c mushrooms
- Tomato juice as
needed
- 1 T fresh cilantro
or parsley
- Salt and pepper to
taste
