Happy Thanksgiving!

This thanksgiving I had the chance to put my baking skills to work and I was in charge of baking the apple pie.  I have never made a pie from scratch on my own before but was pleasantly suprised at how it turned out! I wanted to make one that was a little out of the box and my finished product was a cider bourbon apple pie with an oatmeal cookie crumble (yes, it was as good as it sounds) 

Here is the recipie and some pictures of my creation:

Ingredients: 

Pie Crust 
- 4 C flour
- 1 TBSPN sugar
- 3 TSP salt
- 1 egg, lightly beaten 
-1/2 C ice cold water
- 3 sticks of cold unsalted butter, cut into pieces

Filling
- 6 large apples, peeled and thinly slices
- 2 1/2 TBSPN flour
- 1/2 TSP cinnamon
-1/2 C bourbon 
-1/2 C apple cider
-1/2 C loosely packed brown sugar
- 1 TSP vanilla extract 

Oatmeal Cookie Crumble
- 1 1/2 C old fashioned oats
- 3/4 C loosely packed brown sugar
-1/4 C flour
-1/4 TSP cinnamon
-1/4 TSP salt 
-6 TBSPN unsalted butter, softened 

Crust
1. add flour, sugar, and salt to a food processor and pulse until combined
2. whisk egg and water together in separate bowl
3. add chopped butter to food processor and pulse until small coarse crumbs remain
4.add egg and water to mixture until the dough comes together
5. remove dough and wrap in plactic wrap
6. refrigerate the dough for at least 30 minutes

Filling
1. add apples to large bowl and toss with the flour and cinnamon
2. in saucepan, combine the bourbon, cider, sugar, butter, and vanilla extract. bring to a boil and then reduce it to a simmer and cook for 5-6 minutes, until slightly thickened.  pour it over the apples and toss
3. roll the pie crust out into a 12 in. circle (for a 9 in pan).  press into the pan and add the apples to the crust
4. preheat the oven to 375 deg. F



Cookie Crumble
1. combine the oats, sugar, flour, cinnamon and salt in a large bowl. use hands to crumble and toss mixture 
2. sprinkle the mixture over the apples 



Place the pie in the oven 
Bake for 45-50 minutes, until the crust and crumble on top are golden 


Let cool for at least an hour before serving
