Because it is delicious

Vegetarian Chili Recipe

    • 1 T olive oil
    • 1 garlic clove
    • 1/3 c Spanish yellow onion
    • 1/4 t crushed red pepper flakes
    • 1/2 T ground coriander
    • 1 T ground cumin
    • 1 medium green pepper, 1 medium red bell pepper, seeded and chopped 1 t dried oregano
    • 2 T chili powder
    • 3 medium tomatoes, peeled and chopped or 1 28 oz can tomatoes
    • 1 3/4 c cooked kidney bean, rinsed if canned
    • 1 1/2 c rinsed canned black beans
    • 1 celery stalk
    • 1/2 c mushrooms
    • Tomato juice as needed
    • 1 T fresh cilantro or parsley
    • Salt and pepper to taste
