Chia Seed Pudding!

Surprisingly Tasty!

I found a recipe for chia seed pudding, and since I still had SO much chia on my kitchen shelf, I decided to try it out.  It's great for breakfast with fruit, nuts, or other toppings, or as a snack!  It's yummy, vegan, and super nutritious!


Ingredients:
1/2 c Chia Seeds
2 Bananas
2 c Almond Milk
1 tsp Vanilla Extract
1 tsp Cinnamon

 

Directions:
Peel and slice bananas, then add to bowl and mash as well as possible.  Add Chia seeds and mix well, continuing to mash bananas.  Add Cinnamon and continue to mix.  Combine mixture with Almond milk and Vanilla extract.  Allow to set for at least 3 hours or until the mixture has thickened.  

It's best to prepare the mixture in advanced to allow the pudding to set.  The Chia seeds will absorb the liquid, creating a dish the consistency of tapioca pudding, with a slight crunch due to the shell.  

Feel free to top with berries, jams, honey, peaches, nuts, or dried fruits.  

Yield: 4 servings 

Benefits

Chia seeds are high in omega-3's, essential oils, protein, antioxidants, and a load of other things necessary for a healthy diet! The bananas naturally sweeten the pudding, so no added sugar is necessary.
